Life can be challenging, but a little bit of sweetness can help.

For extra sweetness in life, take the peel, cook it in simple syrup and dip it in chocolate.

For gratitude, look at the pulp and count the many vesicles. They are as numerous as the blessings in your life!

Resilience is recognizing that even though things are challenging, you are able to face those challenges again and again. So, take the seeds, plant them and grow a tree because you never know when you will need to get another lemon.

And finally for Joy, celebrate by cooking and sharing yummy desserts with your friends and family.

Candied Lemons Recipe

  • 3 organic lemons peels cut in strips
  • 2 cups sugar divided
  • 6 oz dark chocolate

Cover the peels with fresh water. Bring to a boil and simmer for 15 minutes.
Drain, cover with fresh water and repeat the process 3 times.
Drain and rinse the peel.

Bring 1 1/2 cups sugar and 1 1/2 cups water to a boil over medium-high heat and cook until the sugar dissolves.

Add the drained peel to the syrup, reduce the heat to low and simmer until the peel is very tender and looks translucent, about 40 minutes.

Scoop the peel from the syrup with a fork and transfer it to the prepared rack to catch the drips.

Dry the peel for about 30 minutes, then dredge in the remaining 1/2 cup sugar. This helps to keep the peel from sticking to each other.

Lay it out on a parchment lined pan and allow the peel to dry overnight.

For the chocolate dip

Melt 5 oz of the chocolate in double boiler

Dip the peels in the chocolate

Let it cool down for 1 hour
